strawberry Crepes with Berry Coulis and Chocolate Drizzle
(Demonstration 1 – Harbourfront Canada Day - 2011)
Makes 6 crepes
- 1 cup all-purpose flour
- 2 eggs
- 1/2 cup milk
- 1/2 cup water
- 1/4 teaspoon salt
- 2 tablespoons butter, melted
- 1L strawberries
- ¼ cup sugar
- 1 lemon
- 2 Tbsp Icing Sugar
- ½ cup cooking chocolate
- 2 Tbsp Vegetable Oil
Directions
- Whisk flour and eggs. Slowly add milk and water, then salt and butter
- Heat a non-stick fry pan on medium heat and ladle in mixture, swirling with the bottom of the ladle
- Remove from pan and stack on plate, separating with parchment paper
- Hull and slice strawberries, mix with sugar and simmer until strawberries have softened
- Zest lemons and add to strawberry mixture
- Melt chocolate, add oil, cool and pour into a squeeze bottle
- Pour strawberry mixture into the centre of the crepes and fold into quarters
- Drizzle with chocolate and top with icing sugar
