Brad Long

As the Executive Chef for Toronto's Maple Leaf Sports & Entertainment Ltd., Long created the culinary program at the Air Canada Centre, BMO Field (the home of Toronto's new soccer sensation, Toronto FC), as well as several other properties crossing multiple F&B disciplines such as Quick Service, Catering, and Restaurants, including the city's best-kept-secret, The Platinum Club, one of Toronto's finest dining rooms.

In 1990 Long got serious about cooking and became entrenched at Toronto's Pronto Ristorante. While working up to Sous Chef and Chef, and attending school full-time, he studied and traveled extensively through Europe and the United States. No stranger to start-up projects, Long's previous culinary challenge was to rebuild the food and beverage program at the CN Tower in 1995, amassing several high-profile awards during his tenure. ir Canada Centre's restaurants saw tremendous success under Long, receiving accolades from fans and media alike. The Platinum Club has won consecutive Wine Spectator Awards of Excellence every year since 2002; a VQA Restaurant Award of Excellence since 2004; and the International Award of Excellence - Diamond Wine Award.  Meanwhile, the Air Canada Club received Globe and Mail reviewer Joanne Kates' Top 10 Restaurants of the Year rating in its' inaugural season.

On to new challenges, Long has ventured into a sustainable farming experiment, a documentary currently in filming and a new Toronto restaurant featuring local, sustainably grown ingredients called Veritas (235 King Street East).
